Hello, I'm Nicky. Owner and chief distiller at Collymoon Craft.
We're a small, family-run business, born from a shared passion for craft gin. After 20 years working in education, I finally had the chance to fulfil a long-held ambition: to create my own gin to share with others.
I'm always sourcing unique botanicals, inspired by those growing wild around us in Scotland, with a few favourite flavours from further afield. I'm proud to have developed our own small-batch Collymoon Craft gins. I hope you enjoy them too.
our Story
How It Began
Our journey started back in 2022, when I registered Collymoon Craft with Companies House and set off into the world of craft gin.
Naively (on my part), I thought I would be up and running producing gin in no time, how wrong was I!
Learning the craft
I read everything I could on distilling, the history of gin, running a business and it all helped me move forward. I took courses in gin making (often dragging my husband Glyn along for the ride); I'd recommend Brew School with Jamie Baxter and the team.
Other gin makers were wonderfully generous with their time. A special thank you to Chris at Shoogle. The more I learned, the more I wanted to know. Along the way I earned my rectifier's licence (the licence to make gin!), plus my personal, AWRS and premises licences.
Bringing it to life
Then came the fun part: developing recipes, logos and branding, and learning to forage. Understanding the seasonality of plants and how to use each part at the right time to bring out the best flavours.
Setting up a distillery is costly, so before taking that plunge I enlisted the help of another. Thanks to Lewis Scothern and the team at Distillutions, I 'cuckoo' their larger stills to run off my own small batches, and Lewis has shared years of experience to help me scale.
Made by our family
I'm so proud of what we've built, and I couldn't have done it without my family. Glyn, Ben, Cameron and Kieran -and the constant encouragement of friends around us.
Since then, our gins have gone on to earn recognition at the World Gin Awards, the Gin Guide Awards and the Scottish Gin Awards.
